Quindins ... na Yammi

QUINDINS

Quindins, um doce típico brasileiro, muito parecido com as nossas brisas do Lis, onde a amêndoa é substituida pelo coco, foi a minha escolha para o lanche um dia destes. Desta vez, feitos de uma forma um pouco diferente, com a ajuda da Yammi, sairam perfeitos e vão ser repetidos mais vezes, de certeza.


Ingredientes:
- 1 ovo
- 3 gemas
- 90g de açúcar
- 50g de coco ralado
- 30g de manteiga
- 15ml de água
- margarina e açúcar para polvilhar as formas

Colocar no copo todos os ingredientes, excepto o coco. Programe 1 minutos, temperatura 37, velocidade 4. Junte o coco e envolva com a espátula. Deixe repousar 30 minutos até o coco hidratar completamente.
Unte forminhas de metal com margarina e polvilhe com açúcar. Encha as forminhas com a massa até cerca de 2/3. Coloque no tabuleiro de vapor e tape com um papel de cozinha absorvente (para evitar que caia água na massa).
Lave o copo da Yammi e encha com 1 litro de água. Programe 25 minutos, temperatura máxima ST, velocidade1. Coloque o tabuleiro sobre o copo e deixe cozer os quindins. Deixe arrefecer um pouco e desenforme com a ajuda de uma faca.

QUINDINS

Quindins, a typical Brazilian sweet, very similar to our “Brisas do Lis” (from Leiria), where the almond is replaced by the coconut, was my choice for a snack one of these days. This time, done in a slightly different way, with the help of Yammi, they came out perfect and I’ll do them again, for sure.


Ingredients:
- 1 egg
- 3 egg yolks
- 90g of sugar
- 50g of grated coconut
- 30g of butter
- 15ml of water
- margarine and sugar to sprinkle the molds

Put in the Yammi glass all the ingredients, except the coconut. Set for 1 minute, temperature 37, speed 4. Add the coconut and wrap with a spatula. Let it stand for 30 minutes until the coconut hydrates completely.
Grease metal molds with margarine and sprinkle with sugar. Fill them with the dough up to about 2/3. Place on the steam tray and cover with absorbent kitchen paper (to prevent water from falling into the dough). 
Wash the glass of Yammi and fill it with 1 liter of water. Program to 25 minutes, maximum temperature ST, speed 1. Place the pan over the glass and let the quindins cook. Let it cool down a bit and unmold it with the help of a knife.
